The Ori’Zaba’s Franchise expanded from Las Vegas to Houston in a milestone deal supported by an FBA broker. Here’s what happened, what made the brand attractive, and how to compare other franchise options today.

Ori’Zaba’s, a scratch Mexican grill that has served fresh Mexican food in Las Vegas since 2001, made a major expansion move by heading out of state to Texas. The first Texas location—planned for Houston—was slated to open in mid-2021 and was owned and operated by seasoned entrepreneur Serge Ukawilu, who moved to the U.S. more than 20 years ago from Gabon, Africa.

This story highlights how the Ori’Zaba’s Franchise opportunity aligned with an operator’s goals at the time, and how a franchise broker helped guide the search and selection process.

Note for readers: Ori’Zaba’s is no longer an active brand partner of the Franchise Brokers Association. This article is presented as an educational case story. If you’re exploring franchise ownership today, we can help you compare current opportunities.

The Houston Ori’Zaba’s Franchise Opening.

The new Houston franchise location was slated to open in mid-2021, bringing the Las Vegas-based concept into Texas for the first time. Ukawilu—an experienced entrepreneur—planned to operate the restaurant while continuing his work in Houston, where he owns several hospice and personal care businesses.

“I have been an entrepreneur for years and was looking for another great investment opportunity,” Ukawilu shared.

“With the combination of a great product and deep support from the corporate team that will set me up for success, I really see the potential of the Ori’Zaba’s business at this Houston location and potentially other sites across Texas,” he added.

FBA Brokers Help You Find The ‘Perfect Fit’.

Many potential franchisees start with a broad goal—“I want a business with strong demand and a real support system”—but need a structured way to narrow options. In this case, an FBA broker helped translate Ukawilu’s business goals into a shortlist of concepts worth validating.

FBA franchise broker David Haupt worked closely with Ukawilu throughout the process and ultimately helped him determine that Ori’Zaba’s was the right fit at the time.

“After exploring various franchises to find the perfect fit for Serge, it was clear that Ori’Zaba’s was the ideal opportunity and excellent match. Ori’Zaba’s has all the ingredients for him to be successful as an owner and operator,” Haupt explained.

Why the Ori’Zaba’s Franchise Stood Out (At the Time)

According to the announcement, the concept was positioned as a strong option for many operators because of:

  • Established business practices.
  • Authentic and differentiated menu items.
  • Delivery, online ordering, and catering options.
  • Enhanced financial, marketing, and labor processes.
  • Vendor partnerships aimed at strong product costs, sourcing, and quality.
  • Comprehensive training designed to support franchisee success.

These themes—menu differentiation, operational systems, and support—are exactly what buyers should look for when comparing restaurant franchises.

What Today’s Franchise Buyers Can Learn From Ori’Zaba’s Case Story.

Even though Ori’Zaba’s is no longer a current FBA partner, the decision process here is a useful template for anyone evaluating franchise opportunities:

1) Start with goals, not brands.

Ukawilu wasn’t just chasing a name—he was looking for the right investment opportunity based on his experience and capacity.

2) Validate support systems early.

Operational support, training, and vendor relationships matter—especially in food, where consistency and margins can make or break an operator.

3) Think beyond a single unit.

Ukawilu’s comments highlighted interest in multi-site potential across Texas—an important reminder to consider territories and long-term runway.
